A delicious crustless quiche made with zucchini and cottage cheese, enhanced with turkey bacon for a delightful meal.

  • 2 cups shredded zucchini
  • 1 cup cottage cheese
  • 4 large eggs
  • 1 cup turkey bacon, cooked and crumbled
  • 1/2 cup shredded cheese (your choice)
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon dried oregano

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, mix the shredded zucchini with the cottage cheese.
  3. Add the eggs and whisk until well combined.
  4. Stir in the crumbled turkey bacon and shredded cheese.
  5. Season with salt, pepper, and oregano, mixing well.
  6. Pour the mixture into a greased pie dish.
