A simple and delicious recipe for Vegan Quesadillas filled with black beans and avocado, perfect for quick weeknight meals.

  • 1 can black beans, drained and rinsed
  • 2 ripe avocados, sliced
  • 8 corn tortillas
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup vegan cheese (optional)
  • 1/4 cup cilantro, chopped

Instructions

  1. In a bowl, combine the black beans, cumin, chili powder, salt, and pepper.
  2. Heat olive oil in a skillet over medium heat.
  3. Place one tortilla in the skillet, add a layer of the bean mixture, avocado slices, and vegan cheese if using, then top with another tortilla.
  4. Cook for 3-4 minutes on each side until golden brown and crispy.
  5. Remove from skillet and repeat with remaining tortillas.
  6. Cut into wedges and serve with cilantro.
