A delicious and healthy recipe combining fresh spinach and feta cheese wrapped in salmon.

Ingredients

  • 2 salmon fillets
  • 1 cup fresh spinach
  • 1/2 cup feta cheese
  • 2 cloves garlic
  • 1 tablespoon olive oil
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat olive oil and sauté garlic until fragrant.
  3. Add spinach and cook until wilted, then remove from heat.
  4. In a bowl, combine spinach with feta cheese, salt, and pepper.
  5. Lay the salmon fillets flat and spread the spinach and feta mixture evenly on top.
  6. Roll the salmon fillets tightly and secure with toothpicks.
  7. Place in a baking dish and bake for 20-25 minutes.
  8. Remove from the oven, slice into pinwheels, and serve.

Notes
