A delightful and nutritious skillet dish combining the flavors of sweet potatoes, black beans, and rice.

  • 2 sweet potatoes, peeled and diced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup cooked rice
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • 2 cups vegetable broth
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add onion and garlic, sautéing until soft.
  3. Stir in sweet potatoes, cumin, chili powder, salt, and pepper.
  4. Add vegetable broth and bring to a boil.
  5. Reduce heat, cover, and simmer until sweet potatoes are tender.
  6. Stir in black beans and cooked rice, heating through.
  7. Adjust seasoning if necessary and serve warm.
