  • 8 large flour tortillas
  • 1 pound breakfast sausage
  • 4 large eggs
  • 1 cup shredded cheddar cheese
  • 2 cups milk
  • 1/4 cup all-purpose flour
  • 1 teaspoon black pepper
  • 1 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cook the sausage in a skillet over medium heat until browned.
  3. In a separate bowl, whisk together the eggs, salt, and pepper.
  4. Scramble the eggs in the skillet with the sausage.
  5. In another pot, melt butter, add flour, and whisk in the milk for the gravy.
  6. Once thickened, pour over the sausage and egg mixture.
  7. Fill each tortilla with the mixture, roll up, and place in a baking dish.
  8. Top with shredded cheddar cheese and bake for 20 minutes.
