The Softest and Juiciest Greek Meatballs in Lemon Sauce

  • 1 pound ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup fresh parsley, chopped
  • 1 cup chicken broth
  • 1/4 cup lemon juice
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine ground beef, breadcrumbs, Parmesan cheese, egg, garlic, oregano, salt, pepper, and parsley.
  3. Form the mixture into meatballs and place them on a baking sheet.
  4. Bake meatballs in the oven for 25 minutes, until browned and cooked through.
  5. In a saucepan, combine chicken broth, lemon juice, and olive oil. Bring to a simmer.
  6. Add the baked meatballs to the sauce and cook for an additional 10 minutes.
  7. Serve the meatballs with the sauce over them.

Notes

  • For extra flavor, add some lemon zest to the meatball mixture.
  • You can serve these meatballs with pasta or rice.
