- 2 cups shredded cabbage
- 1 pound chicken thighs
- 4 slices turkey bacon
- 1 large onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup carrots, sliced
- Cook turkey bacon in a large pot over medium heat until crispy. Remove and crumble.
- Add onion and garlic to the pot and sauté until translucent.
- Stir in chicken thighs, broth, cabbage, carrots, thyme, salt, and pepper. Bring to a boil.
- Reduce heat and let simmer for 30 minutes, or until chicken is cooked through.
- Remove chicken, shred, and return to pot along with the crumbled bacon. Stir to combine.
