- 2 medium beets, roasted and pureed
- 1 cup almond flour
- 2 egg whites
- 1/4 teaspoon salt
- 1/2 cup powdered sugar
- 4 ounces goat cheese
- 1/4 cup walnuts, chopped
- 2 tablespoons honey
- 1 tablespoon fresh thyme, chopped
- Preheat the oven to 300°F (150°C) and line a baking sheet with parchment paper.
- In a bowl, mix the beet puree with almond flour, salt, and powdered sugar until well combined.
- Whisk egg whites in a separate bowl until stiff peaks form, then gently fold into the beet mixture.
- Pipe the mixture onto the prepared baking sheet in small circles.
- Bake for 15-20 minutes, then let cool completely.
- In another bowl, mix goat cheese, honey, walnuts, and thyme to make the filling.
- Spread a generous amount of filling onto half of the macarons and sandwich with the other half.
