Delicious savory beet macarons filled with creamy goat cheese and topped with a crunchy walnut mix. Perfect for appetizers!

Ingredients

  • 2 medium beets, roasted and pureed
  • 1 cup almond flour
  • 2 egg whites
  • 1/4 teaspoon salt
  • 1/2 cup powdered sugar
  • 4 ounces goat cheese
  • 1/4 cup walnuts, chopped
  • 2 tablespoons honey
  • 1 tablespoon fresh thyme, chopped

Instructions

  1. Preheat the oven to 300°F (150°C) and line a baking sheet with parchment paper.
  2. In a bowl, mix the beet puree with almond flour, salt, and powdered sugar until well combined.
  3. Whisk egg whites in a separate bowl until stiff peaks form, then gently fold into the beet mixture.
  4. Pipe the mixture onto the prepared baking sheet in small circles.
  5. Bake for 15-20 minutes, then let cool completely.
  6. In another bowl, mix goat cheese, honey, walnuts, and thyme to make the filling.
  7. Spread a generous amount of filling onto half of the macarons and sandwich with the other half.

Notes

  • Let the macarons sit for at least 24 hours before serving for the best flavor.
  • These macarons can also be served with a drizzle of balsamic reduction for added flavor.
