Delicious and easy to prepare sausage and sweet potatoes drizzled with a sweet honey garlic sauce.

Ingredients

  • 1 pound sausage
  • 2 cups sweet potatoes, cubed
  • 1/4 cup honey
  • 3 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine cubed sweet potatoes, olive oil, salt, and black pepper; mix well.
  3. Spread the sweet potatoes on a baking sheet and roast for 25 minutes.
  4. In a small saucepan, combine honey, garlic, and soy sauce; bring to a simmer over medium heat.
  5. Remove the sweet potatoes from the oven and add the sausage to the baking sheet.
  6. Drizzle the honey garlic sauce over the sausage and sweet potatoes.
  7. Toss to combine and return to the oven for an additional 15-20 minutes.

Notes

  • For a spicier version, add red pepper flakes to the honey garlic sauce.
  • Feel free to substitute the sausage with chicken or turkey sausage.
