6 large eggs
4 strips turkey bacon
1/4 cup mayonnaise
1 teaspoon Dijon mustard
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon chives, chopped
1 tablespoon paprika for garnish
1 cucumber, sliced for decoration
Instructions
Hard boil the eggs by placing them in a pot, covering with water, and bringing to a boil. Let them boil for 10 minutes.
Remove the eggs from the hot water and place them in an ice bath to cool.
Once cooled, peel the eggs and cut them in half lengthwise.
Remove the yolks and place them in a bowl. Add mayonnaise, Dijon mustard, salt, black pepper, and chives to the yolks and mix well.
Fill the egg whites with the yolk mixture.
Cook the turkey bacon until crispy, then crumble and sprinkle on top of the filled eggs.
Garnish with paprika and place cucumber slices at the base to resemble a pumpkin patch.
Serve immediately or refrigerate until ready to serve.
Notes
For a spicier kick, add a dash of hot sauce to the yolk mixture.
Make sure to chill the eggs before serving for best flavor.
