A delicious and moist pumpkin cornbread served with a sweet cinnamon honey butter, perfect for fall.

Ingredients

  • 1 cup pumpkin puree
  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 2 large eggs
  • 1/2 cup milk
  • 1/4 cup vegetable oil

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine all the dry ingredients.
  3. In another bowl, whisk together the wet ingredients.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. Pour the batter into a greased baking dish.
  6. Bake for 25 to 30 minutes or until a toothpick comes out clean.

Notes

  • For an added twist, serve with cream cheese instead of butter.
