Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the grated carrots, crushed pineapple, and vegetable oil.
  3. Add the sugar and eggs, mixing until well combined.
  4. In another bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Stir in the vanilla extract.
  7. Pour the batter into a greased cake pan and bake for 30-35 minutes.
