- 8 ounces elbow macaroni
- 2 cups corn kernels (fresh or canned)
- 4 slices turkey bacon, cooked and chopped
- 1 cup cherry tomatoes, halved
- 1/2 cup red onion, diced
- 1/2 cup cilantro, chopped
- 1 lime, juice and zest
- 1/2 teaspoon chili powder
- 1/4 teaspoon garlic powder
- 1/2 cup mayonnaise
- 1/2 cup sour cream
- Cook the macaroni according to the package instructions. Drain and set aside to cool.
- In a large bowl, combine the corn, turkey bacon, cherry tomatoes, red onion, and cilantro.
- Add the cooled macaroni to the bowl with the other ingredients.
- In a small bowl, mix together the lime juice, lime zest, chili powder, garlic powder, mayonnaise, and sour cream.
- Pour the dressing over the pasta salad and mix until well combined.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
- For a spicier kick, add diced jalapeƱos.
- Can be made a day in advance for better flavor.
