A delicious and fresh twist on pasta salad with all the authentic flavors of Mexican street corn.

Ingredients

  • 8 ounces elbow macaroni
  • 2 cups corn kernels (fresh or canned)
  • 4 slices turkey bacon, cooked and chopped
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, diced
  • 1/2 cup cilantro, chopped
  • 1 lime, juice and zest
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon garlic powder
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream

Instructions

  1. Cook the macaroni according to the package instructions. Drain and set aside to cool.
  2. In a large bowl, combine the corn, turkey bacon, cherry tomatoes, red onion, and cilantro.
  3. Add the cooled macaroni to the bowl with the other ingredients.
  4. In a small bowl, mix together the lime juice, lime zest, chili powder, garlic powder, mayonnaise, and sour cream.
  5. Pour the dressing over the pasta salad and mix until well combined.
  6. Chill in the refrigerator for at least 30 minutes before serving.

Notes

  • For a spicier kick, add diced jalapeƱos.
  • Can be made a day in advance for better flavor.
