- 2 pounds beef chuck roast
- 2 cups beef broth
- 2 dried guajillo chiles
- 2 dried ancho chiles
- 1 onion, chopped
- 4 cloves garlic, minced
- 1 tablespoon ground cumin
- 1 tablespoon dried oregano
- 1 teaspoon black pepper
- 12 corn tortillas
- 1 cup chopped cilantro
- 1 lime, cut into wedges
- In a pot, combine beef chuck with beef broth, guajillo chiles, ancho chiles, onion, garlic, cumin, oregano, and black pepper.
- Bring to a boil, then reduce heat and simmer for 2 hours until beef is tender. Shred beef with two forks.
- Heat a skillet over medium heat and warm tortillas.
- Fill each tortilla with shredded beef and top with cilantro and squeeze of lime.
- Serve immediately.
Notes
- For extra flavor, marinate the beef overnight.
- Serve with consome for dipping.
