  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup mashed bananas (about 2-3 ripe bananas)
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix together the flour, sugar, baking powder, and salt.
  3. In another bowl, whisk together the melted butter, eggs, vanilla, and mashed bananas until smooth.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in chocolate chips if using.
  5. Divide the batter evenly among the muffin cups.
  6. Bake for 18-20 minutes or until a toothpick comes out clean.
  7. Let cool for a few minutes before transferring to a wire rack to cool completely.
