These mini banana muffins are perfect for a quick snack or breakfast, packed with banana flavor and incredibly easy to make.

  • 1/3 cup melted butter
  • 1/2 cup sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup all-purpose flour

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a mini muffin tin.
  2. In a mixing bowl, mash the ripe bananas with a fork until smooth.
  3. Stir in the melted butter, then mix in the sugar, egg, and vanilla.
  4. Add baking soda and salt, then mix in the flour until just combined.
  5. Pour the batter into the mini muffin tin, filling each cup about 2/3 full.
  6. Bake for about 10-12 minutes, or until a toothpick comes out clean.
  7. Let cool slightly before removing from the tin.
