These Mini Banana Chocolate Chip Muffins are the perfect treat for any occasion. They are easy to make and absolutely delicious!

  • 2 ripe bananas
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/3 cup unsalted butter, melted
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup all-purpose flour
  • 1/2 cup chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C) and line a mini muffin tin with liners.
  2. In a mixing bowl, mash the bananas until smooth.
  3. Add the granulated sugar, brown sugar, melted butter, egg, and vanilla extract to the mashed bananas and mix well.
  4. In a separate bowl, whisk together the baking soda, salt, and flour.
  5. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  6. Fold in the chocolate chips.
  7. Fill each muffin cup about 2/3 full with the batter.
  8. Bake for 10-12 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let the muffins cool in the pan for a few minutes before transferring them to a wire rack to cool completely.

Notes

  • For added flavor, you can sprinkle some extra chocolate chips on top before baking.
  • Feel free to substitute half of the all-purpose flour with whole wheat flour for a healthier option.
