  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a bowl, mix the grated zucchini with the dry ingredients.

  5. Fill the muffin cups about 2/3 full with the batter.
