These Maple Dijon Chicken & Sweet Potato Bowls are a perfect easy weeknight dinner that combines savory and sweet flavors for a satisfying meal.

Ingredients

  • 2 chicken breasts
  • 1 tablespoon Dijon mustard
  • 2 tablespoons maple syrup
  • 2 sweet potatoes
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 2 cups broccoli florets

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a small bowl, mix together the Dijon mustard and maple syrup.
  3. Place the chicken breasts in a baking dish and brush the maple Dijon mixture over them.
  4. Chop the sweet potatoes into cubes, toss with olive oil, salt, pepper, and garlic powder, and spread on a baking sheet.
  5. Bake the chicken and sweet potatoes for 25-30 minutes, until the chicken is cooked through and sweet potatoes are tender.
  6. In the last 10 minutes of baking, add broccoli florets to the baking sheet to roast.
  7. Serve the chicken with the sweet potatoes and broccoli in bowls.
