  • 1/2 cup mixed fresh fruit for topping

Instructions

  1. In a bowl, mix together flour, sugar, baking powder, and salt.
  2. In another bowl, whisk milk, egg, and melted butter together.
  3. Combine wet and dry ingredients, then gently fold in the diced mango.
  4. Cook turkey bacon in a skillet until crispy, set aside.
  5. Pour batter onto a heated non-stick skillet, flipping pancakes when bubbles form.
  6. Serve pancakes topped with fresh fruit and crispy turkey bacon.
