1 cup granulated sugar
1 tablespoon poppy seeds
1 tablespoon lemon zest
1 tablespoon baking powder
1/2 teaspoon salt
1/2 cup unsalted butter, melted
2 large eggs
1 cup milk
1 teaspoon vanilla extract
1/4 cup fresh lemon juice
Instructions
Preheat oven to 350°F (175°C) and line a muffin tin with paper liners.
In a large bowl, combine flour, sugar, poppy seeds, lemon zest, baking powder, and salt.
In another bowl, whisk together melted butter, eggs, milk, vanilla extract, and lemon juice.
Pour the wet ingredients into the dry ingredients and mix until just combined.
Fill each muffin cup about 2/3 full with the batter.
Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
Let muffins cool in the tin for 5 minutes before transferring to a wire rack to cool completely.
Notes
For a richer flavor, you can add a lemon glaze on top of the muffins.
