- 1 cup Arborio rice
- 4 cups chicken or seafood broth
- 1 cup cooked lobster meat, chopped
- 1/2 cup white wine
- 1/4 cup unsalted butter
- 1/2 cup grated Parmesan cheese
- 1 lemon, zested and juiced
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 2 tablespoons fresh parsley, chopped
- Salt to taste
- Black pepper to taste
- In a saucepan, heat the broth to a simmer.
- In a separate pan, melt 2 tablespoons of butter over medium heat. Add onion and garlic, sautéing until translucent.
- Add the Arborio rice and toast for 2 minutes, then stir in the white wine.
- Gradually add the broth, one ladle at a time, allowing the rice to absorb it before adding more.
- After 16-18 minutes, when the rice is al dente, stir in the cooked lobster, remaining butter, Parmesan cheese, lemon zest, and lemon juice.
- Season with salt and pepper, then garnish with fresh parsley before serving.
Notes
- For extra richness, consider adding a splash of cream.
- Feel free to substitute shrimp for lobster if desired.
