  • 4 cups chicken or seafood broth
  • 1 cup cooked lobster meat, chopped
  • 1/2 cup white wine
  • 1/4 cup unsalted butter
  • 1/2 cup grated Parmesan cheese
  • 1 lemon, zested and juiced
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped
  • Salt to taste
  • Black pepper to taste

Instructions

  1. In a saucepan, heat the broth to a simmer.
  2. In a separate pan, melt 2 tablespoons of butter over medium heat. Add onion and garlic, sautéing until translucent.
  3. Add the Arborio rice and toast for 2 minutes, then stir in the white wine.
  4. Gradually add the broth, one ladle at a time, allowing the rice to absorb it before adding more.
  5. After 16-18 minutes, when the rice is al dente, stir in the cooked lobster, remaining butter, Parmesan cheese, lemon zest, and lemon juice.
  6. Season with salt and pepper, then garnish with fresh parsley before serving.
