  • 1 lemon, halved
  • 4 sprigs fresh thyme
  • 4 tablespoons olive oil
  • 1 tablespoon salt
  • 1 teaspoon black pepper
  • 1 cup chicken broth

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a roasting pan, place the Cornish hens breast side up.
  3. Rub the hens with olive oil and season with salt and pepper.
  4. Stuff the cavity of each hen with thyme and lemon halves.
  5. Pour chicken broth into the pan.
  6. Roast in the oven for about 1 hour, or until the internal temperature reaches 165°F (74°C).
  7. Let rest for 10 minutes before serving.
