- 2 Cornish hens
- 1 cup diced apples
- 1/2 cup dried cranberries
- 1/2 cup bread crumbs
- 1/4 cup chopped walnuts
- 1/4 cup onion, finely chopped
- 2 tablespoons butter
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup chicken broth
- Preheat the oven to 375°F (190°C).
- In a large skillet, melt the butter over medium heat.
- Add onions and cook until translucent.
- Add apples, cranberries, walnuts, thyme, salt, and pepper. Stir to combine.
- Remove from heat and mix in bread crumbs.
- Stuff each Cornish hen with the mixture.
- Place hens in a roasting pan and pour chicken broth around them.
- Cover with foil and bake for 60 minutes.
- Remove foil and bake for an additional 30 minutes until golden brown.
- Let rest before serving.
