  • 1 tablespoon olive oil
  • 1 cup diced onion
  • 2 cups diced carrots
  • 2 cups diced potatoes
  • 1 cup turkey bacon, chopped
  • 1 cup chicken ham, cubed
  • 4 cups vegetable broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups chopped kale

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the diced onion and sauté until translucent.
  3. Stir in diced carrots and potatoes, cooking for another 5 minutes.
  4. Add the chopped turkey bacon and chicken ham, and cook until browned.
  5. Pour in the vegetable broth and bring to a simmer.
  6. Add Worcestershire sauce, thyme, salt, and pepper; stir well.
  7. Cover and let simmer for 30 minutes.
  8. In the last 5 minutes, add the chopped kale and stir until wilted.

Notes

  • This stew can be made ahead of time and tastes even better the next day.
  • Serve with crusty bread for a complete meal.
