A delightful combination of sweet dates, creamy ricotta, and crunchy pistachios.

Ingredients

  • 12 Medjool dates
  • 1 cup ricotta cheese
  • 1/4 cup shelled pistachios, chopped
  • 2 tablespoons honey
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon sea salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Slice the dates lengthwise and remove the pits.
  3. In a bowl, mix ricotta cheese, chopped pistachios, honey, vanilla extract, and sea salt.
  4. Stuff each date with the ricotta mixture.
  5. Place the stuffed dates on a baking sheet and bake for about 10 minutes.
  6. Drizzle with additional honey before serving.
