A creamy and satisfying vegan potato soup recipe inspired by traditional German flavors.

Ingredients

  • 4 large potatoes
  • 1 medium onion
  • 2 cloves garlic
  • 4 cups vegetable broth
  • 1 cup coconut milk
  • 1 teaspoon smoked paprika
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 2 tablespoons fresh parsley

Instructions

  1. Peel and dice the potatoes, onion, garlic, carrots, and celery.
  2. Heat the olive oil in a large pot over medium heat.
  3. Add the onion, garlic, carrots, and celery. Sauté until the vegetables are softened.
  4. Add the potatoes, vegetable broth, smoked paprika, salt, and black pepper to the pot.
  5. Bring to a boil, then reduce heat and simmer for 25 minutes or until the potatoes are tender.
  6. Stir in the coconut milk and blend the soup until smooth using an immersion blender.
  7. Serve hot, garnished with fresh parsley.

Notes

  • This soup can be made ahead of time and stored in the refrigerator.
  • For a spicier version, add a pinch of cayenne pepper.
