- 1 medium onion
- 2 cloves garlic
- 4 cups vegetable broth
- 1 cup coconut milk
- 1 teaspoon smoked paprika
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup chopped carrots
- 1 cup chopped celery
- 2 tablespoons fresh parsley
- Peel and dice the potatoes, onion, garlic, carrots, and celery.
- Heat the olive oil in a large pot over medium heat.
- Add the onion, garlic, carrots, and celery. Sauté until the vegetables are softened.
- Add the potatoes, vegetable broth, smoked paprika, salt, and black pepper to the pot.
- Bring to a boil, then reduce heat and simmer for 25 minutes or until the potatoes are tender.
- Stir in the coconut milk and blend the soup until smooth using an immersion blender.
- Serve hot, garnished with fresh parsley.
