  • 4 oz cream cheese
  • 1/2 cup sugar
  • 1/4 cup brown sugar
  • 1/3 cup vegetable oil
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin pan with paper liners.
  2. In a mixing bowl, mash the bananas and cream cheese together until smooth.
  3. Add the sugars, vegetable oil, eggs, and vanilla extract. Mix until well combined.
  4. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Pour the batter into the prepared muffin pan, filling each cup about 2/3 full.
  7. Bake for 18-20 minutes, or until a toothpick inserted comes out clean.
  8. Allow to cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
