  • 1 cup French green lentils
  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 8 ounces mushrooms, sliced
  • 6 cups vegetable broth
  • 1 teaspoon thyme
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the onion, garlic, carrots, and celery, and sauté until softened.
  3. Stir in the mushrooms and cook until they’re browned.
  4. Add the lentils, broth, thyme, and bay leaf, and bring to a boil.
  5. Reduce heat and simmer for 30 minutes or until lentils are tender.
  6. Season with salt and pepper to taste, and serve warm.
