  • 1 cup milk
  • 1/2 cup brown sugar
  • 1/4 cup unsweetened applesauce
  • 1/4 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a muffin tin.
  2. In a bowl, combine rolled oats and milk. Let it sit for 10 minutes.
  3. Add brown sugar, applesauce, vegetable oil, and vanilla extract. Mix well.
  4. In another bowl, whisk together flour, baking powder, baking soda, and salt.
  5. Combine both mixtures and fold in chocolate chips.
  6. Scoop the batter into the muffin tin.
  7. Bake for 18-20 minutes or until a toothpick comes out clean.
  8. Let them cool before removing from the tin.
