A delicious and healthy fall harvest quinoa salad that combines turkey bacon with seasonal ingredients.

Ingredients

  • 1 cup quinoa
  • 4 slices turkey bacon
  • 1 cup roasted butternut squash
  • 1 cup fresh spinach
  • 1/2 cup dried cranberries
  • 1/4 cup walnuts, chopped
  • 1/4 cup feta cheese, crumbled
  • 2 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon maple syrup
  • Salt to taste
  • Pepper to taste

Instructions

  1. Cook quinoa according to package instructions and let cool.
  2. In a skillet, cook turkey bacon until crispy, then chop into pieces.
  3. In a large bowl, combine cooled quinoa, turkey bacon, roasted butternut squash, spinach, cranberries, walnuts, and feta cheese.
  4. In a small bowl, whisk together olive oil, balsamic vinegar, and maple syrup. Pour over salad and toss to combine.
  5. Season with salt and pepper to taste.
