  • 1 cup grated carrots
  • 1/2 cup honey or maple syrup
  • 1/3 cup vegetable oil
  • 2 large eggs
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/2 cup raisins or nuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with liners.
  2. In a large bowl, mix the oats, grated carrots, honey, vegetable oil, and eggs until well combined.
  3. Add baking powder, baking soda, salt, and cinnamon, stirring until incorporated.
  4. If desired, fold in raisins or nuts.
  5. Spoon the batter into the prepared muffin tin, filling each cup about two-thirds full.
  6. Bake for 20-25 minutes or until a toothpick comes out clean.
  7. Allow to cool for a few minutes before transferring to a wire rack.
