These easy matcha blueberry muffins are the perfect wholesome breakfast treat, combining the rich flavor of matcha green tea with sweet blueberries.

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1 tablespoon matcha powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup buttermilk
  • 1/4 cup vegetable oil
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup fresh blueberries

Instructions

  1. Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a mixing bowl, whisk together the flour, sugar, matcha powder, baking powder, baking soda, and salt.
  3. In another bowl, mix the buttermilk, vegetable oil, egg, and vanilla extract until combined.
  4. Pour the wet ingredients into the dry ingredients, stirring until just combined. Gently fold in the blueberries.
  5. Fill the muffin cups with the batter and bake for 18-20 minutes, or until a toothpick comes out clean.
  6. Allow to cool on a wire rack before serving.

Notes

  • For a vegan option, substitute the buttermilk with plant-based milk and the egg with a flaxseed egg.
  • Make sure to gently fold in the blueberries to prevent them from breaking.
