A delicious and zesty coconut lime fish curry served with jasmine rice.

  • 1 tablespoon olive oil
  • 1 can (14 oz) coconut milk
  • 2 tablespoons lime juice
  • 1 teaspoon lime zest
  • 1 tablespoon red curry paste
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 1 cup jasmine rice
  • 2 cups vegetable broth

Instructions

  1. Heat olive oil in a pan over medium heat.
  2. Add garlic and ginger, sauté until fragrant.
  3. Stir in red curry paste and cook for 1 minute.
  4. Add coconut milk, lime juice, and lime zest; bring to a simmer.
  5. Add fish fillets and cook until done, about 5-7 minutes.
