  • 1 cup grated carrots

  • 1/3 cup vegetable oil

  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a mixing bowl, mash the ripe bananas and mix in the grated carrots.
  3. Add sugar, vegetable oil, eggs, and vanilla extract to the mixture and stir until well combined.
  4. In a separate bowl, whisk together flour, baking soda, salt, and cinnamon.
  5. Gradually add the dry ingredients to the wet mixture, stirring just until combined. If using, fold in the chopped walnuts.
  6. Divide the batter evenly among the muffin cups.
  7. Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.
  8. Allow the muffins to cool in the tin for 5 minutes before transferring to a wire rack to cool completely.

Notes

  • For added sweetness, you can substitute some of the sugar with honey or maple syrup.
  • These muffins freeze well; store them in a sealed bag for up to 2 months.
