  • 2 pounds chuck roast
  • 1 tablespoon olive oil
  • 4 guajillo peppers
  • 2 ancho peppers
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 cups beef broth
  • 1 tablespoon cumin
  • 1 tablespoon oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 12 corn tortillas
  • 1 cup chopped cilantro
  • 1 lime, cut into wedges

Instructions

  1. Heat olive oil in a skillet over medium heat and sear the chuck roast on all sides.
  2. In a blender, combine guajillo peppers, ancho peppers, onion, garlic, beef broth, cumin, oregano, salt, and pepper. Blend until smooth.
  3. Place the seared roast in the Crock Pot and pour the blended sauce over it.
  4. Cover and cook on low for 8 hours or until the meat is very tender.
  5. Remove the meat from the pot and shred it with two forks.
  6. Serve the shredded meat in corn tortillas and top with cilantro and lime juice.

Notes

  • For extra flavor, marinate the meat overnight with the spices.
