  • 2 pounds beef chuck roast
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 tablespoon chili powder
  • 1 tablespoon cumin
  • 4 cloves garlic, minced
  • 2 cups beef broth
  • 1 onion, chopped
  • 2 dried guajillo peppers, seeds removed
  • 1 bay leaf
  • 12 corn tortillas
  • 1 cup chopped cilantro
  • 1 lime, cut into wedges

Instructions

  1. Season the beef chuck roast with salt, black pepper, chili powder, and cumin.
  2. In a pan, heat a little oil and brown the beef on all sides.
  3. Transfer the beef to a slow cooker and add minced garlic, beef broth, chopped onion, guajillo peppers, and a bay leaf.
  4. Cook on low for 8 hours or until the meat is tender.
  5. Remove the meat, shred it with two forks, and return it to the slow cooker to soak up more juices.
  6. Warm corn tortillas in a skillet and fill each with shredded meat, cilantro, and a squeeze of lime.
  7. Serve immediately.
