Ingredients

  • 4 cups zucchini, chopped
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onions and garlic, sautéing until the onions are translucent.
  2. Add the chopped zucchini and cook for about 5 minutes until softened.
  3. Pour in the vegetable broth and bring to a boil. Reduce the heat and let it simmer for 15 minutes.
  4. Using an immersion blender, blend the soup until smooth. Alternatively, allow the soup to cool slightly and blend in batches using a regular blender.
  5. Stir in the heavy cream, salt, black pepper, and thyme. Heat through and serve hot.

Notes

  • For a lighter version, substitute heavy cream with coconut milk.
