  • 1 pound chicken breast, diced
  • 1 cup mushrooms, sliced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 teaspoons thyme
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add chicken and cook until browned. Remove and set aside.
  3. Add onion, garlic, and mushrooms; sauté until soft.
  4. Stir in wild rice and broth; bring to a boil.
  5. Reduce heat, cover, and simmer for 45 minutes.
  6. Stir in heavy cream, thyme, and the cooked chicken; season with salt and pepper.
  7. Let simmer for an additional 10 minutes before serving.
