  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon garlic powder
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. In a pot, heat the olive oil over medium heat.
  2. Add the diced potatoes and mixed vegetables, sauté for 5 minutes.
  3. Pour in the vegetable broth and bring to a boil.
  4. Reduce heat, cover, and simmer for 20 minutes until vegetables are tender.
  5. Blend the soup using an immersion blender until smooth.
  6. Stir in the heavy cream, salt, pepper, thyme, and garlic powder.
  7. Cook for an additional 5 minutes, then serve hot, garnished with parsley.
