This creamy avocado toast topped with a poached egg and cherry tomatoes is an easy yet delightful meal.

Ingredients

  • 2 slices whole grain bread
  • 1 ripe avocado
  • 2 eggs
  • 1 cup cherry tomatoes
  • 1 tablespoon olive oil
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Toast the slices of whole grain bread until golden brown.
  2. In a bowl, mash the ripe avocado and season with salt and pepper.
  3. Spread the mashed avocado evenly over the toasted bread.
  4. In a small pot, bring water to a gentle simmer to poach the eggs.
  5. Crack each egg into a small bowl and gently slide them into the simmering water. Cook for about 3-4 minutes.
  6. While the eggs are poaching, heat olive oil in a pan and sauté the cherry tomatoes until they are blistered.
  7. Once the eggs are cooked, remove them with a slotted spoon and place them on top of the avocado toast.
  8. Top with sautéed cherry tomatoes.

Notes

  • For an extra kick, add red pepper flakes over the top.
  • Serve immediately for best flavor and texture.
