  • 2 slices whole grain bread
  • 1 ripe avocado
  • 2 large eggs
  • 1 cup cherry tomatoes
  • 1 tablespoon olive oil
  • salt to taste
  • black pepper to taste
  • 1 tablespoon lemon juice

Instructions

  1. Begin by toasting the slices of whole grain bread until golden brown.
  2. While the bread is toasting, prepare the poached eggs.
  3. In a small pot, bring water to a simmer and add a splash of vinegar.
  4. Crack an egg into a small bowl, then gently slide it into the simmering water.
  5. Poach the egg for about 3 minutes, until the white is set but the yolk remains runny. Repeat for the second egg.
  6. Meanwhile, in a bowl, mash the ripe avocado with lemon juice, salt, and pepper.
  7. In a skillet, heat olive oil and sauté the cherry tomatoes until they start to blister.
  8. Spread the creamy avocado mixture onto the toasted bread.
  9. Top each toast with a poached egg and sprinkle with sautéed cherry tomatoes.
  10. Season with additional salt and pepper if desired, then serve immediately.

  • For easier poaching, use fresh eggs.
