2 cups all-purpose flour
1 cup granulated sugar
1 tablespoon baking powder
1/2 teaspoon salt
1/2 cup unsalted butter, melted
2 large eggs
1 teaspoon vanilla extract
1 cup fresh cranberries, chopped
1 cup white chocolate chips
1/2 cup brown sugar
1/4 cup flour for streusel
1/2 teaspoon cinnamon
Instructions
Preheat the oven to 350°F (175°C) and line a muffin tin with liners.
In a large mixing bowl, combine flour, sugar, baking powder, and salt.
In another bowl, whisk together melted butter, eggs, and vanilla extract.
Combine the wet and dry ingredients, then fold in cranberries and white chocolate chips.
To make the streusel, mix brown sugar, flour, and cinnamon in a small bowl.
Spoon batter into muffin cups and sprinkle streusel on top.
Bake for 18-20 minutes or until a toothpick inserted comes out clean.
Allow to cool before serving.
