  • 1 tablespoon gelatin powder
  • 3 tablespoons water

Instructions

  1. In a saucepan, combine cranberries and sugar. Cook over medium heat until the cranberries burst.
  2. In a separate bowl, dissolve gelatin in water and let sit for a few minutes.
  3. Add the gelatin mixture to the cranberry mixture and stir until combined.
  4. In another bowl, whip heavy cream until soft peaks form, then fold in vanilla extract.
  5. Gently fold the cranberry mixture into the whipped cream.
  6. Spoon the mixture into cups and refrigerate for at least 2 hours.
  7. Serve chilled and enjoy!
