  • 2 Cornish hens
  • 1 cup rice
  • 2 cups chicken broth
  • 1 apple, diced
  • 1/2 cup dried cranberries
  • 1/4 cup onion, chopped
  • 1 tsp thyme
  • 1 tsp salt
  • 1/2 tsp pepper
  • 2 tbsp butter

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a saucepan, combine the rice and chicken broth. Bring to a boil, then reduce heat and simmer until rice is tender.
  3. In a skillet, melt butter and sauté onion until translucent. Add apple, cranberries, thyme, salt, and pepper.
  4. Mix the sautéed mixture with the cooked rice.
  5. Stuff the Cornish hens with the rice mixture and place them on a roasting pan.
  6. Roast in the oven for 1 hour or until the internal temperature reaches 165°F (75°C).
