  • 2 eggs

  • 1 1/2 cups all-purpose flour

  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 cup chopped nuts or chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, cream together the butter, sugar, and brown sugar until light and fluffy.
  3. Add the eggs, one at a time, then stir in the mashed bananas and vanilla extract.
  4. In another bowl, combine the flour, baking soda, salt, and cinnamon; gradually add to the banana mixture and mix until just combined.
  5. Fold in nuts or chocolate chips if desired.
  6. Fill the muffin cups about 2/3 full with batter.
  7. Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
