A delicious and nutritious soup combining chicken, poblano peppers, and black beans for a fulfilling meal.

  • 1 poblano pepper, diced
  • 1 can black beans, rinsed and drained
  • 4 cups chicken broth
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and poblano pepper, sauté until soft.
  3. Stir in minced garlic, cumin, and chili powder; cook for another minute.
  4. Add shredded chicken, black beans, and chicken broth; bring to a boil.
  5. Reduce heat and simmer for 20 minutes. Season with salt and pepper.
