- 2 cups cooked shredded chicken
- 1 cup sour cream
- 1 cup shredded cheese
- 1/2 cup green onions, chopped
- 1 can enchilada sauce
- 8 flour tortillas
- 1 tablespoon olive oil
- Preheat the oven to 350°F (175°C).
- In a bowl, mix the shredded chicken, sour cream, half of the cheese, and green onions.
- Spoon the mixture into each tortilla, roll them up, and place them seam-side down in a baking dish.
- Pour the enchilada sauce over the rolled tortillas.
- Sprinkle the remaining cheese on top.
- Drizzle with olive oil and bake for 25-30 minutes until bubbly.
