Delicious chicken enchiladas covered in a creamy sour cream white sauce.

Ingredients

  • 2 cups cooked shredded chicken
  • 1 cup sour cream
  • 1 cup shredded cheese
  • 1/2 cup green onions, chopped
  • 1 can enchilada sauce
  • 8 flour tortillas
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix the shredded chicken, sour cream, half of the cheese, and green onions.
  3. Spoon the mixture into each tortilla, roll them up, and place them seam-side down in a baking dish.
  4. Pour the enchilada sauce over the rolled tortillas.
  5. Sprinkle the remaining cheese on top.
  6. Drizzle with olive oil and bake for 25-30 minutes until bubbly.

Notes

  • For extra flavor, add diced jalapenos to the filling.
  • Serve with a side of rice or beans.
