A delicious twist on traditional enchiladas, combining tortellini with savory beef and melted cheese.

  • 2 cups cheese tortellini
  • 1 can (10 oz) enchilada sauce
  • 1 cup shredded cheddar cheese
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 tablespoon olive oil
  • 1/2 cup chopped onion
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a skillet, heat olive oil over medium heat. Add chopped onion and sauté until translucent.
  3. Add ground beef, cumin, garlic powder, salt, and pepper. Cook until browned.
  4. Stir in enchilada sauce and cooked tortellini.
  5. Transfer mixture to a baking dish and top with shredded cheddar cheese.
  6. Bake for 20-25 minutes, until cheese is melted and bubbly.
