Ingredients

  • 1 pound salmon fillets
  • 1/2 cup panko breadcrumbs
  • 1 tablespoon olive oil
  • 1/4 cup mayonnaise
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon sriracha
  • 2 cups cooked rice
  • 1 cup steamed broccoli
  • 1/4 cup green onions, sliced

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix mayonnaise, sweet chili sauce, and sriracha.
  3. Coat the salmon fillets with olive oil and then evenly cover them with panko breadcrumbs.
  4. Place the salmon on a baking sheet and bake for 12-15 minutes until cooked through.
  5. Once cooked, cut the salmon into bite-sized pieces.
  6. Assemble bowls with rice, steamed broccoli, and salmon bites.
  7. Drizzle with the sauce mixture and top with green onions.
